Ingredients

1 lb ground beef

1 can Rotel diced tomatoes with green chilies (10 oz)

16 oz Velveeta cheese, cubed

4 oz cream cheese

1 packet ranch seasoning mix

Optional chopped cilantro or parsley for garnish


Instructions

1. Brown the ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat.

2. Add the undrained can of Rotel and stir. Let simmer for 2–3 minutes.

3. Reduce heat to low and add the cream cheese. Stir until completely melted and creamy.

4. Add cubed Velveeta cheese and stir until fully melted and smooth.

5. Stir in the ranch seasoning mix and combine well.

6. Transfer to a serving bowl or slow cooker. Garnish with cilantro or parsley if desired.

7. Serve warm with chips, veggies, or bread.

Notes

Cut Velveeta into cubes before adding for quicker melting.
