Ingredients

  • 2 lbs baby potatoes (halved or quartered)
  • 2 tbsp olive oil (or melted butter)
  • 1 packet ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 2 tbsp grated Parmesan (optional)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • Fresh parsley or chives (optional garnish)
  • Sour cream or ranch dressing (optional topping)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and cut baby potatoes into halves or quarters. Optional: soak in cold water for 30 minutes for extra crispiness.
  3. Pat potatoes dry thoroughly.
  4. In a large mixing bowl, toss potatoes with olive oil, ranch seasoning, garlic powder, paprika, salt, and pepper.
  5. Fold in half the shredded cheddar cheese.
  6. Spread potatoes in a single layer on a baking sheet or dish, cut side down.
  7. Roast for 25–30 minutes, flipping halfway through for even browning.
  8. Remove from oven, top with remaining cheddar and Parmesan.
  9. Return to oven for 5–7 minutes until cheese is bubbly and lightly golden.
