Ingredients

8 large eggs

1/3 cup milk (optional)

1/2 cup red bell pepper, finely diced

1/2 cup green bell pepper, finely diced

3/4 cup shredded cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 12-cup muffin tin.

2. Dice the red and green bell peppers into small, uniform pieces.

3. Crack the eggs into a large bowl, add milk if using, and season with salt and pepper. Whisk until smooth.
