Ingredients
1 lb ground beef
2 cups cooked shredded chicken
3 cups tortilla chips
1 can black beans (15 oz), drained and rinsed
1 cup corn kernels
1 cup diced tomatoes
1 cup diced bell peppers
1 small onion, diced
3 cloves garlic, minced
2 tbsp taco seasoning
1 cup sour cream
4 oz cream cheese
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup nacho cheese sauce
2 tbsp olive oil
1/4 cup fresh cilantro, chopped
1/4 cup sliced jalapeños (optional)
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 375°F (190°C) and prepare a baking dish.
2. Heat olive oil in a skillet over medium heat and cook ground beef until browned. Drain excess fat.
3. Add onion and bell peppers, sauté until softened, then stir in garlic and cook briefly.
4. Mix in taco seasoning, then add black beans, corn, and diced tomatoes. Simmer for 5 minutes.
5. Reduce heat and stir in cream cheese and sour cream until smooth and creamy.
6. In a baking dish, layer tortilla chips followed by the meat mixture. Repeat layers evenly.
7. Pour nacho cheese sauce over the top and sprinkle cheddar and Monterey Jack cheese.
8. Bake for 20–25 minutes until cheese is melted and bubbly.
9. Remove from oven, let rest briefly, then garnish with cilantro and jalapeños before serving.
Notes
Use thick tortilla chips to prevent sogginess and maintain texture.
Let the casserole rest for 5–10 minutes before serving for easier slicing.
Customize the spice level by adjusting jalapeños and taco seasoning.
