Ingredients

  • 2 cups mashed potatoes (cold or leftover)
  • 2 large eggs, lightly beaten
  • 1 cup shredded cheese (cheddar, mozzarella, or mixed)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 tablespoons melted butter
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder (optional)
  • Salt & black pepper to taste
  • Non-stick spray or butter (for greasing the muffin tin)

Instructions

  1. Preheat & Prep: Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick spray or butter.
  2. Mix Ingredients: In a large bowl, combine mashed potatoes, eggs, shredded cheese, Parmesan, sour cream, melted butter, chives, garlic powder, salt, and pepper. Stir until evenly mixed.
  3. Fill Muffin Cups: Spoon the mixture into the muffin tin, filling each cup about three-quarters full. Slightly mound the tops for a crispy finish.
  4. Bake: Place in the oven and bake for 20-25 minutes until the tops are golden brown and slightly crispy.
  5. Cool & Serve: Let the puffs cool for 5 minutes, then gently remove them from the tin. Garnish with extra chives or Parmesan if desired. Serve warm and enjoy!
