Ingredients

1 lb lean ground beef

1 small yellow onion, finely chopped

2 cloves garlic, minced

1 cup long grain white rice (uncooked or cooked)

2 1/2 cups beef broth (for uncooked rice version)

1 can (10.5 oz) cream of mushroom soup

1 can (10.5 oz) cream of cheddar or cream of chicken soup

1 1/2 cups shredded sharp cheddar cheese

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika (optional)

1/2 tsp dried parsley or Italian seasoning

1 tbsp olive oil or butter

Fresh parsley (optional garnish)


Instructions

1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease if needed and set aside.

2. In the same skillet, add olive oil or butter. Sauté chopped onion for 3–4 minutes until softened. Add garlic and cook for 30 seconds.

3. Stir in the rice, beef broth (if using uncooked rice), cream soups, salt, pepper, paprika, and seasoning. Mix well.

4. Return the cooked beef to the skillet and add shredded cheese. Stir until evenly combined and cheese begins to melt.

5. Transfer mixture to a greased 9×13-inch baking dish. Smooth the top with a spatula.

6. Sprinkle extra cheese over the top. Cover with foil and bake at 375°F (190°C) for 25 minutes.

7. Remove foil and bake another 10–15 minutes until cheese is bubbly and golden.

8. Let the casserole rest for 5–10 minutes. Garnish with chopped parsley before serving.
