Ingredients
450g sirloin or ribeye steak, cut into bite-sized pieces
1 teaspoon salt
½ teaspoon black pepper
4 cloves garlic, minced
3 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
¾ cup freshly grated Parmesan cheese
300g linguine pasta
2 tablespoons chopped parsley (optional)
½ teaspoon red pepper flakes (optional)
Instructions
1. Cut steak into bite-sized cubes and pat dry. Season with salt and pepper.
2. Bring a pot of salted water to a boil. Cook linguine until al dente, reserving ½ cup pasta water.
3. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat.
4. Sear steak bites in batches for 2–3 minutes per side. Set aside and keep warm.
5. In the same skillet, reduce heat to medium. Add remaining butter and minced garlic. Sauté until fragrant.
6. Stir in heavy cream and bring to a gentle simmer.
7. Add Parmesan cheese and stir until melted and smooth.
8. Add cooked linguine to the sauce and toss to coat. Add pasta water if needed to loosen sauce.
9. Return steak bites to the skillet or plate them over the pasta. Spoon garlic butter over the top.
10. Garnish with chopped parsley and red pepper flakes if using. Serve immediately.
Notes
Use freshly grated Parmesan for the smoothest, creamiest sauce.
Don’t skip patting the steak dry—it’s crucial for a proper sear.
Reserve pasta water before draining; it helps emulsify and loosen the sauce if needed.
