Ingredients

1 lb ground beef

28 oz frozen diced potatoes (thawed slightly)

1 cup frozen diced onion and bell pepper blend (or fresh)

10.5 oz can cream of mushroom soup

1/2 cup sour cream

1 1/2 cups shredded sharp cheddar cheese (divided)

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika (optional)

Salt and pepper to taste

2 tbsp olive oil or butter (for cooking vegetables)

Cooking spray (for greasing the baking dish)


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a large skillet over medium heat, brown the ground beef until no pink remains. Drain the excess fat.

3. Add olive oil or butter to the skillet, then sauté onion and bell pepper mix for 5–7 minutes. Season with garlic powder, onion powder, paprika, salt, and pepper.

4. In a large bowl, combine beef, sautéed vegetables, thawed potatoes, cream of mushroom soup, sour cream, and 1 cup cheddar cheese. Mix well.

5. Spread the mixture into the baking dish. Top with remaining 1/2 cup cheddar cheese.

6. Cover with foil and bake for 30 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.

7. Let sit for 5–10 minutes before serving. Garnish if desired.

Notes

You can substitute cream of mushroom soup with cream of chicken or a homemade white sauce.

For added texture, top with crushed butter crackers or French-fried onions during the last 10 minutes.

Thaw frozen potatoes slightly to ensure even cooking and avoid sogginess.
