Ingredients

2 large chicken breasts

1 tablespoon olive oil

2 tablespoons unsalted butter

4 cloves garlic minced

1 teaspoon smoked paprika

0.5 teaspoon onion powder

0.5 teaspoon dried oregano

Salt and black pepper to taste

12 ounces rotini pasta

2 tablespoons unsalted butter

3 cloves garlic minced

1.5 cups heavy cream

1 cup grated Parmesan cheese

0.5 cup shredded mozzarella cheese

Salt and freshly ground black pepper to taste

1 tablespoon chopped parsley

0.25 teaspoon red pepper flakes

1 tablespoon lemon juice


Instructions

1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook until just shy of al dente, about 1–2 minutes less than package directions. Drain and set aside, reserving ½ cup pasta water.

2. Pat the chicken dry and season with paprika, onion powder, oregano, salt, and pepper.

3. Heat olive oil in a large skillet over medium-high. Sear chicken pieces for 4–5 minutes until golden and cooked through. Add butter and garlic in the last minute, toss well, and set aside.

4. In another skillet, melt butter and sauté garlic over medium heat until fragrant.

5. Pour in heavy cream, bring to a gentle simmer, and stir in Parmesan and mozzarella. Whisk until smooth. Season with salt and pepper.

6. Add cooked pasta to the Alfredo sauce and stir to coat. Add a splash of pasta water if needed. Top with extra mozzarella and cover briefly to melt.

7. Serve pasta on plates, topped with garlic butter chicken. Garnish with parsley.

8. Optional: Add red pepper flakes or lemon juice for extra brightness and flavor.
