Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- For the cheesecake filling, beat together the cream cheese, powdered sugar, vanilla extract, and salt until smooth. Set aside.
- For the apple filling, melt butter in a pan over medium heat. Add chopped apples, sugar, and cinnamon. Cook until the apples soften and caramelize, about 5-7 minutes.
- Scoop tablespoon-sized portions of cookie dough and flatten them slightly. Place a spoonful of cheesecake filling in the center, followed by the apple filling. Fold the dough around the filling to form a ball.
- Place the cookie dough balls on the prepared baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until golden around the edges.
