Ingredients

  • For the cookie dough:

    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 2 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
  • For the cheesecake filling:

    • 8 oz cream cheese, softened
    • ½ cup powdered sugar
    • 1 teaspoon vanilla extract
    • Pinch of salt
  • For the apple filling:

    • 2 medium apples, peeled and chopped
    • 1 tablespoon butter
    • 2 tablespoons sugar
    • 1 teaspoon cinnamon
  • For the topping:

    • ½ cup caramel sauce
    • ½ cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs and vanilla, mixing well.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
  4. For the cheesecake filling, beat together the cream cheese, powdered sugar, vanilla extract, and salt until smooth. Set aside.
  5. For the apple filling, melt butter in a pan over medium heat. Add chopped apples, sugar, and cinnamon. Cook until the apples soften and caramelize, about 5-7 minutes.
  6. Scoop tablespoon-sized portions of cookie dough and flatten them slightly. Place a spoonful of cheesecake filling in the center, followed by the apple filling. Fold the dough around the filling to form a ball.
  7. Place the cookie dough balls on the prepared baking sheet, spacing them 2 inches apart. Bake for 12-15 minutes until golden around the edges.
  8. Once baked, drizzle with caramel sauce and sprinkle with chopped pecans. Allow to cool slightly before serving.
