Description
These golden, pan-seared Cheese Blintzes are a fusion of tender crepes and a creamy cheese filling, topped with fresh berries and powdered sugar. Perfect for breakfast or dessert, they’re crisp on the outside and silky inside, making each bite a balanced mix of textures and flavors.
Ingredients
1 cup all-purpose flour
1 1/4 cups whole milk
2 large eggs
2 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 cup ricotta cheese
4 oz cream cheese, softened
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest (optional)
2 tablespoons unsalted butter for frying
fresh raspberries
mint leaves (optional)
powdered sugar for dusting
Instructions
1. In a blender or bowl, mix flour, milk, eggs, melted butter, sugar, salt, and vanilla extract until smooth. Chill batter for 30 minutes.
2. Heat a non-stick skillet, lightly butter it, pour in 1/4 cup batter, and swirl to coat. Cook 1–2 minutes, flip, and cook 30 seconds more. Repeat.
3. In a bowl, combine ricotta, cream cheese, powdered sugar, vanilla, and lemon zest until smooth.
4. Lay each crepe golden-side down, add 1–2 tbsp filling, fold sides, and roll up.
5. In a skillet, melt butter and cook blintzes seam-side down over medium-low heat until golden, 2–3 minutes per side.
6. Serve warm with powdered sugar, fresh raspberries, and mint if desired.
Notes
Let the batter rest before cooking for tender crepes.
Drain ricotta if it’s watery.
Chill assembled blintzes before frying for best shape.
Crepes and filling can be made ahead and stored.
