8 small tortillas

1 avocado sliced optional

1 cup shredded cabbage optional

1/4 cup crumbled queso fresco optional


Instructions

1. Preheat oven to 425°F and line a baking sheet

2. Wash, dry, and cut cauliflower into evenly sized florets

3. Mix oil and spices in a bowl, then toss cauliflower until well coated

4. Spread cauliflower in a single layer on the baking sheet

5. Roast for 25 to 30 minutes, flipping halfway through until golden and crisp

6. Blend crema ingredients until smooth, adding water to thin if needed
