Description

Cattle Drive Casserole is a warm, comforting, and flavor-packed dish that layers seasoned ground beef, sweet corn, tomatoes, and green chilies beneath a golden, cheesy biscuit crust. It’s a weeknight favorite and a crowd-pleaser with just enough spice and tons of rich, satisfying flavor.


Ingredients

1 lb ground beef

1 small yellow onion, diced

1 green bell pepper, diced

15 oz can diced tomatoes, undrained

8 oz can tomato sauce

15 oz can whole kernel corn, drained

4 oz can diced green chilies (optional)

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1/2 tsp cumin

salt and black pepper to taste

2 cups biscuit mix

2/3 cup milk

1 cup shredded cheddar cheese

1/2 tsp paprika (optional)


Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish.

2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.

3. Add the diced onion and green bell pepper to the skillet and cook for 4–5 minutes until softened.

4. Stir in the diced tomatoes, tomato sauce, corn, green chilies (if using), garlic powder, onion powder, chili powder, cumin, salt, and pepper. Simmer for 5–7 minutes to thicken.

5. Pour the beef mixture into the prepared casserole dish and spread evenly.

6. In a bowl, combine biscuit mix and milk. Stir until just combined. Fold in half of the cheddar cheese.

7. Drop spoonfuls of the biscuit dough over the beef layer. Spread gently without covering entirely.

8. Sprinkle remaining cheese on top and dust with paprika if desired.

9. Bake uncovered for 25–30 minutes or until the biscuit topping is golden and cooked through.

10. Let rest 5–10 minutes before serving. Garnish with sour cream or fresh herbs if desired.

Notes

Let the casserole cool slightly before serving to help it set and slice cleanly.

Use fresh herbs or a dollop of sour cream for a beautiful garnish.

Customize with other cheeses, veggies, or ground meat options as desired.
