Ingredients

For the Cookies:

  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened

  • ½ cup raisins (optional)

For the Cream Cheese Drizzle:

  • 2 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Prepare the Dry Ingredients – In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  2. Mix the Wet Ingredients – In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla extract, mixing until smooth.
  3. Combine the Mixtures – Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  4. Fold in Carrots and Mix-ins – Gently stir in shredded carrots, nuts, and raisins (if using).
  5. Chill the Dough – Cover and refrigerate for at least 30 minutes to prevent spreading.
  6. Bake the Cookies – Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoon-sized portions onto the sheet, spacing them 2 inches apart. Bake for 10-12 minutes, until edges are golden.
