Ingredients

2 large yellow onions, thinly sliced

2 tablespoons butter

1 teaspoon fresh thyme leaves

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded Gruyère cheese

1/2 cup shredded mozzarella cheese

1 lb refrigerated pizza dough

1 egg, beaten (for egg wash)

1 tablespoon olive oil (optional)

1 teaspoon chopped fresh rosemary (optional garnish)


Instructions

1. Caramelize onions: In a skillet over low heat, cook sliced onions in butter for 30–40 minutes until deep golden brown. Stir in thyme, salt, and pepper during the last 5 minutes. Let cool.

2. Roll out pizza dough into a rectangle and cut into 16–20 squares. Let rest 5 minutes.

3. Combine cooled onions with Gruyère and mozzarella. Spoon onto each dough square and seal into balls.

4. Place an oven-safe bowl in the center of a parchment-lined tray. Arrange dough balls around it in a wreath shape, seam-side down.

5. Brush tops with egg wash.

6. Bake at 375°F (190°C) for 25–30 minutes until golden and puffed.

7. Cool slightly. Garnish with remaining onions, rosemary, and a drizzle of olive oil if desired. Serve warm.

Notes

Let the caramelized onions cool completely before filling to avoid soggy dough.

Don’t overfill each dough ball—just a small spoonful of filling is enough.

This recipe can be prepped the night before and baked the next day.
