2 large yellow onions, thinly sliced

2 tablespoons unsalted butter

1 tablespoon olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon sugar

8 ounces Gruyere cheese, freshly shredded

4 ounces cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

1/4 teaspoon garlic powder

1/4 teaspoon dried thyme or 1/2 teaspoon fresh thyme leaves

Fresh chives or parsley for garnish (optional)

Toasted baguette slices, crackers, or chips for serving


Instructions

1. Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions, salt, pepper, and sugar. Stir to coat and cook slowly for 30-40 minutes, stirring occasionally until deep golden and soft.

2. In a bowl, combine cream cheese, sour cream, and mayonnaise. Stir until smooth. Add garlic powder, thyme, and three-quarters of the Gruyere. Mix well.

3. Fold caramelized onions into the cheese mixture. Mix until evenly combined.

4. Preheat oven to 375°F (190°C). Transfer the mixture into a greased baking dish or skillet. Top with remaining Gruyere.

5. Bake for 20-25 minutes until golden and bubbly. Broil for 1-2 minutes for more browning if desired.

6. Garnish with chives or parsley and serve hot with toasted bread or crackers.

Notes

Always caramelize the onions slowly over low heat for the richest flavor.

Shred cheese fresh for best melting—pre-shredded cheese may not melt as smoothly.
