Ingredients
For the Cookie Base:

- 1 teaspoon vanilla extract
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
For the Caramel Topping:
- ½ cup caramel sauce (store-bought or homemade)
- ¼ teaspoon sea salt (optional, for a salted caramel flavor)
- Crushed graham crackers or cookie crumbs (for garnish)
Instructions
- Prepare the Cookie Dough: In a medium bowl, whisk together flour, baking soda, and salt. In a separate large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla, mixing until combined. Gradually add dry ingredients to wet ingredients, mixing until just combined. Chill the dough for 30 minutes.
- Make the Cheesecake Filling: In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Transfer to a piping bag or cover and refrigerate.
- Assemble the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop cookie dough onto the sheet, spacing 2 inches apart. Use your thumb or a spoon to create an indentation in the center of each cookie and fill with about ½ teaspoon of the cheesecake mixture.
- Bake the Cookies: Bake for 10-12 minutes or until the edges are golden. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Add the Caramel Topping: Once the cookies are completely cool, drizzle with caramel sauce and sprinkle with sea salt and crushed graham crackers.
