½ cup granulated sugar
1 tsp vanilla extract
2 large eggs
2 medium apples, peeled, cored, and finely chopped
2 tbsp all-purpose flour
2 tbsp brown sugar
½ tsp ground cinnamon
¼ tsp ground nutmeg
½ cup all-purpose flour
½ cup brown sugar
¼ cup old-fashioned oats
½ tsp ground cinnamon
¼ cup unsalted butter, cold and cubed
½ cup caramel sauce
Pinch of sea salt (optional)
Instructions
1. Preheat oven to 325°F (163°C). Line a 9×13-inch pan with parchment paper.
2. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the pan. Chill 15 mins, then prebake for 10 mins.
3. In a bowl, beat cream cheese until smooth. Add sugar and vanilla. Mix in eggs one at a time. Spread over crust.
4. Toss chopped apples with flour, brown sugar, cinnamon, and nutmeg. Layer evenly over cheesecake.
5. Combine flour, brown sugar, oats, and cinnamon for the crumble. Cut in cold butter until crumbly. Sprinkle on top.
6. Bake for 40–45 mins until the center is set and topping is golden. Cool completely, then refrigerate for 3 hours or overnight.
7. Drizzle with caramel sauce and a pinch of sea salt before serving. Slice into bars and enjoy!
Notes
Chill thoroughly before slicing to get clean, neat bars.
Use cold butter in the crumble topping for the best texture.
Bars taste even better the next day as flavors settle and deepen.
