A refreshing and elegant Italian-inspired salad made with juicy tomatoes, creamy fresh mozzarella, fragrant basil leaves, and a drizzle of olive oil and balsamic glaze. Ingredients
1 cup cherry or grape tomatoes, halved
1 cup fresh mozzarella balls (bocconcini or ciliegine), drained
1/4 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze
1/4 teaspoon sea salt
1/8 teaspoon freshly cracked black pepper
Instructions
1. Wash and slice the cherry or grape tomatoes in half. If using larger tomatoes, cut into thick slices or chunks. Place in a serving bowl.
2. Drain the mozzarella balls and pat dry with paper towels. Add to the tomatoes in the bowl.
3. Tear the fresh basil leaves with your hands and scatter them over the tomatoes and mozzarella.
4. Drizzle extra virgin olive oil evenly over the salad.
5. Add a swirl of balsamic glaze over the top.
6. Season with sea salt and freshly cracked black pepper.
7. Toss gently or leave layered for presentation.
8. Serve immediately at room temperature.
