Ingredients
- Pasta (Rotini): 12 ounces, cooked al dente
- Shrimp: 1 pound, peeled and deveined
- Andouille Sausage: 12 ounces, sliced
- Cajun Seasoning: 2 tablespoons
- Ranch Seasoning: 1 tablespoon
- Heavy Cream: 1 cup
- Chicken Broth: 1 cup
- Garlic: 3 cloves, minced
- Olive Oil: 2 tablespoons
- Parmesan Cheese: ½ cup, freshly grated (optional)
- Fresh Parsley: For garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- Sear the Sausage: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned and crispy, about 4–5 minutes. Remove sausage from skillet and set aside.
- Cook the Shrimp: In the same skillet, add more olive oil if needed. Add the shrimp and season with Cajun seasoning. Cook for about 2–3 minutes per side, or until pink and fully cooked. Remove and set aside with the sausage.
- Make the Sauce: Lower heat to medium and add minced garlic to the skillet. Sauté for about 30 seconds. Pour in chicken broth, heavy cream, and ranch seasoning, stirring well. Let the sauce simmer for 5 minutes to thicken slightly.
- Combine Everything: Return the cooked pasta, sausage, and shrimp to the skillet. Toss well to coat with the sauce. Add a splash of pasta water if the sauce is too thick.
- Garnish and Serve: Sprinkle with Parmesan cheese and fresh parsley before serving. Serve hot and enjoy!
