Ingredients

  • 8 oz rotini pasta
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb andouille sausage, sliced into rounds
  • 1 tbsp Cajun seasoning (divided)
  • 1 tbsp ranch seasoning mix
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the rotini pasta in salted water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add sausage and sear until browned on both sides, about 6–8 minutes. Remove and set aside.
  3. Add 1 tbsp butter to the skillet. Season shrimp with half of the Cajun seasoning. Cook for 1–2 minutes per side until pink and opaque. Remove and set aside.
  4. Lower heat to medium. Add remaining butter and minced garlic to the skillet. Cook for 30 seconds until fragrant.
  5. Pour in heavy cream. Stir in ranch seasoning and remaining Cajun seasoning. Let it simmer for 2–3 minutes.
  6. Stir in Parmesan cheese until melted and smooth. Taste and adjust seasoning if needed.
  7. Add cooked pasta, sausage, and shrimp back into the skillet. Toss to coat and let everything simmer together for another 2 minutes.
  8. Garnish with chopped parsley and serve hot.
