Ingredients

1 tablespoon olive oil

1 medium yellow onion, diced

2 cloves garlic, minced

14 oz smoked sausage, sliced

4 slices thick-cut bacon, chopped

4 cups gold potatoes, diced

4 cups chicken broth

1 1/2 cups heavy cream

1 1/2 teaspoons Cajun seasoning

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1 cup shredded sharp cheddar cheese

1 tablespoon fresh parsley, chopped

Optional: crushed red pepper flakes or hot sauce


Instructions

1. Heat olive oil in a Dutch oven over medium heat. Add diced onion and cook 3–4 minutes until translucent. Stir in garlic and cook for 30 seconds.

2. Add chopped bacon and cook until it begins to crisp. Stir in sausage and brown for 4–5 minutes.

3. Add diced potatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir to coat everything evenly.

4. Pour in chicken broth and bring to a boil. Reduce heat and simmer uncovered for 15–20 minutes, until potatoes are fork-tender.

5. Lower heat and stir in heavy cream. Gradually add shredded cheddar, stirring until melted and smooth.

6. Adjust seasoning, add red pepper flakes or hot sauce if desired, and simmer 5 more minutes.

7. Serve hot, garnished with fresh parsley and extra cheese if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or whole milk.

Browning the sausage and bacon deeply enhances the soup’s flavor.

To loosen thick leftovers, add a splash of broth or milk when reheating.
