2 large boneless skinless chicken breasts
1 ½ tablespoons Cajun seasoning
1 teaspoon smoked paprika

3 tablespoons unsalted butter
5 cloves garlic finely minced
1 ½ cups heavy cream
1 ½ cups freshly shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 teaspoon dried parsley or 1 tablespoon chopped fresh parsley
½ teaspoon red pepper flakes (optional)

12 oz spaghetti
1 tablespoon salt for pasta water
Water for boiling

Instructions
1. Pat chicken breasts dry. Rub both sides with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Let sit for 10–15 minutes.
2. Boil a pot of salted water. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water, then drain.
3. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken 5–6 minutes per side, until golden and internal temp reaches 165°F. Rest on a board.
4. In the same skillet, reduce heat to medium. Melt butter and sauté garlic until fragrant, about 1 minute.
5. Add heavy cream and let it simmer gently for 2–3 minutes.
6. Stir in mozzarella and Parmesan until melted. Add parsley, red pepper flakes, salt, and pepper.
7. Toss cooked spaghetti into the sauce. Add pasta water as needed for consistency.
