Ingredients

12 oz rotini pasta

2 boneless skinless chicken breasts

1 tablespoon Cajun seasoning

1 tablespoon butter or oil

1 cup whole milk

8 oz Velveeta cheese, cubed

1 cup shredded mozzarella cheese

2 cloves garlic, minced (optional)

1 tablespoon chopped parsley (optional, for garnish)

Salt and pepper to taste

½ cup reserved pasta water (as needed)


Instructions

1. Cut the chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

2. In a skillet, heat butter or oil over medium-high heat. Sear the chicken until golden and fully cooked, about 8–10 minutes. Set aside.

3. Boil the rotini in salted water until al dente. Reserve ½ cup of pasta water, then drain.

4. In the same skillet, lower heat to medium. Add milk and Velveeta cubes, stirring until melted and smooth. Add mozzarella and stir until fully combined.

5. Stir the cooked rotini into the cheese sauce. Add pasta water a little at a time to reach desired consistency.

6. Return chicken to the skillet and stir to combine. Let it heat through for 1–2 minutes.

7. Garnish with chopped parsley and serve hot.

Notes

Use freshly shredded mozzarella to avoid clumps in the cheese sauce.

Don’t skip seasoning the pasta water—it makes a big flavor difference.
