8 ripe peaches peeled and sliced

0.5 cup granulated sugar

2 tablespoons brown sugar

2 teaspoons cornstarch

1 cup all-purpose flour

0.75 cup granulated sugar

1 teaspoon baking powder

0.25 teaspoon salt

0.5 cup unsalted butter melted

1 large egg

1 tablespoon vanilla extract

2 tablespoons milk optional

Turbinado sugar optional topping

Extra butter pats optional topping


Instructions

1. Preheat oven to 350°F (175°C).

2. Mix peaches with sugars lemon juice vanilla cinnamon and cornstarch then let sit 10 minutes.

3. Whisk flour sugar baking powder and salt in a bowl.

4. Combine melted butter egg and vanilla in another bowl.

5. Stir wet ingredients into dry ingredients until a thick batter forms.

6. Grease a 9×13 inch baking dish and spread peach mixture evenly.

7. Drop spoonfuls of batter over peaches leaving some gaps.

8. Sprinkle turbinado sugar and small butter pats if desired.

9. Bake for 40 to 45 minutes until golden and bubbly.

10. Let rest 15 minutes before serving.
