Ingredients
For the Pork Chops:
- 2 bone-in pork chops (about 1-inch thick)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2–3 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
- 1/2 cup chicken broth
- 1 teaspoon Worcestershire sauce
For the Mashed Potatoes:
- 3 large russet potatoes, peeled and cubed
- 1/2 cup heavy cream (or whole milk)
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup parmesan cheese (optional)
Instructions
1. Prepare the Ingredients
- Remove pork chops from the fridge and let them sit at room temperature for 20-30 minutes.
- Pat them dry with a paper towel and season both sides with salt, black pepper, and paprika.
- Peel and cube the potatoes, mince the garlic, and prepare the butter and thyme.
2. Cook the Mashed Potatoes
- Place cubed potatoes in a pot of cold, salted water. Bring to a boil and cook for 15-20 minutes until fork-tender.
- In a small pan, melt butter over low heat, add minced garlic, and sauté until fragrant (1-2 minutes).
- Drain the potatoes, mash them, and mix in warm garlic butter, heavy cream, salt, and black pepper. Stir in parmesan cheese if using. Cover and keep warm.
3. Sear the Pork Chops
- Heat olive oil in a cast iron skillet over medium-high heat.
- Sear the pork chops for 3-4 minutes on the first side without moving them. Flip and sear for another 3 minutes.
- Reduce heat to medium, add butter, garlic, and thyme, and baste the chops for 1-2 minutes.
4. Deglaze the Pan
- Remove pork chops and let them rest on a plate.
- Pour chicken broth and Worcestershire sauce into the skillet, scraping up any browned bits. Simmer for 2-3 minutes until slightly thickened.
- Pour the sauce over the resting pork chops.
5. Serve and Enjoy
- Plate the pork chops with mashed potatoes.
- Drizzle the garlic butter sauce over the top and garnish with fresh thyme.
