Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil (plus more for bruschetta)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 4 Roma tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic glaze (or more to taste)
Instructions
- Preheat grill or skillet to medium-high heat.
- Pat chicken breasts dry and rub with olive oil. Season both sides with salt, pepper, and Italian seasoning.
- Grill or sear chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. Let rest.
- While chicken cooks, mix diced tomatoes, garlic, chopped basil, a drizzle of olive oil, and a pinch of salt and pepper in a bowl.
- Once chicken is rested, spoon tomato mixture over each piece.
- Drizzle balsamic glaze on top and garnish with extra basil if desired.
- Serve immediately.
