  • Yield: 4 servings

Description

A fresh and flavorful dish where juicy grilled chicken breasts are topped with a vibrant tomato-basil bruschetta mixture and finished with a sweet, tangy balsamic glaze. It’s an easy, healthy, and satisfying twist on the classic Italian appetizer.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (plus more for bruschetta)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic glaze (or more to taste)

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Pat chicken breasts dry and rub with olive oil. Season both sides with salt, pepper, and Italian seasoning.
  3. Grill or sear chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. Let rest.
  4. While chicken cooks, mix diced tomatoes, garlic, chopped basil, a drizzle of olive oil, and a pinch of salt and pepper in a bowl.
  5. Once chicken is rested, spoon tomato mixture over each piece.
  6. Drizzle balsamic glaze on top and garnish with extra basil if desired.
  7. Serve immediately.
