Description

These Blueberry Swirl Yogurt Bites are a creamy, refreshing, and healthy no-bake treat made with Greek yogurt, sweet blueberry compote, and a touch of honey. Perfect for a quick snack, dessert, or breakfast bite, they’re easy to make and full of protein, antioxidants, and natural sweetness. Freeze and enjoy anytime!

Ingredients

  • 1 cup Greek yogurt (full-fat for creaminess)
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional, for thickening the blueberry compote)

Instructions

  1. In a small saucepan over medium heat, combine blueberries, honey, and lemon juice. Simmer for 5 minutes until the blueberries soften. If using cornstarch, mix it with a tablespoon of water and stir it in. Let cool completely.
  2. In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with extra honey if needed.
  3. Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity three-quarters full.
  4. Add a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick to gently swirl the mixture for a marbled effect.
  5. Freeze for at least 3 hours or until fully set.
  6. Once frozen, remove from the molds and store in an airtight container in the freezer. Let sit at room temperature for 2–3 minutes before eating.
