6 medium Yukon Gold potatoes

6 tablespoons unsalted butter

4 garlic cloves finely minced

2 tablespoons olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 tablespoon fresh thyme leaves

2 tablespoons chopped fresh parsley

1/4 cup grated Parmesan cheese optional


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Wash and dry the potatoes thoroughly while keeping the skin on.

3. Place each potato between chopsticks or wooden spoon handles to prevent cutting all the way through.

4. Slice thin vertical cuts across each potato stopping about 1/4 inch from the bottom.

5. Melt butter in a small saucepan and mix with garlic olive oil salt pepper and thyme.

6. Brush the garlic butter generously over each potato making sure it seeps between the slices.

7. Bake the potatoes for 45 minutes brushing again with the remaining garlic butter halfway through cooking.

8. Sprinkle Parmesan cheese over the potatoes during the final 10 to 15 minutes if using.

9. Continue baking until the edges are crispy and the inside is fork tender about 60 minutes total.

10. Garnish with chopped parsley and serve hot.

Notes

Slice slowly and evenly to avoid cutting completely through the potatoes.
