Ingredients

6 bone-in, skin-on chicken thighs

1 large yellow onion, thinly sliced

4 cloves garlic, minced

1 cup cherry tomatoes

0.5 cup Kalamata olives, pitted

0.5 cup crumbled feta cheese

1 lemon, sliced

Juice of 1 lemon

0.25 cup chicken broth

2 tablespoons olive oil

1 tablespoon dried oregano

1 teaspoon dried thyme

0.5 teaspoon paprika

Salt and freshly ground black pepper, to taste

Fresh thyme sprigs, for garnish (optional)


Instructions

1. Pat chicken dry and season with oregano, thyme, paprika, salt, and pepper. Let sit 10–15 minutes.

2. (Optional) Sear chicken in olive oil over medium-high heat, 4–5 minutes per side until golden.

3. Place sliced onions and garlic in bottom of slow cooker.

4. Add chicken on top, then cherry tomatoes, olives, lemon juice, broth, and lemon slices.

5. Sprinkle crumbled feta over the top.

6. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.

7. Taste and adjust seasoning if needed before serving.

8. Garnish with fresh thyme and extra feta. Serve hot with your favorite side.

Notes

Searing the chicken before slow cooking adds a deep, rich flavor to the dish.

Letting the chicken rest after seasoning boosts the flavor absorption.
