Ingredients
2 medium zucchini
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or olive oil spray
Instructions
1. Wash and dry the zucchini, then slice into 1/4-inch thick rounds.
2. In one bowl, whisk the eggs. In another bowl, combine panko, Parmesan, garlic powder, salt, and pepper.
3. Dip zucchini slices in egg, then coat in breadcrumb mixture. Press lightly for better adhesion.
4. Preheat air fryer to 400°F (200°C) for 2–3 minutes.
5. Arrange slices in a single layer in the basket. Lightly spray tops with oil.
6. Air fry for 8–10 minutes, flipping halfway, until golden and crisp.
