Ingredients

  • 2 large (10-inch) flour tortillas
  • 1/2 pound beef steak (flank, skirt, or sirloin), thinly sliced
  • 2 cups French fries (freshly cooked or frozen and baked)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup creamy chipotle mayo (or your favorite sauce)
  • Salt and pepper, to taste
  • 1 tablespoon oil (for cooking beef)

Instructions

  1. Cook the French fries until crispy and golden. Season with a pinch of salt.
  2. Heat a skillet with oil over medium-high heat. Sear the beef slices, seasoning with salt and pepper, until cooked and juicy (about 4–6 minutes). Set aside.
  3. Warm tortillas in a skillet for 10 seconds per side until soft and pliable.
  4. Layer the center of each tortilla with lettuce, beef, fries, cheese, and sauce.
  5. Fold in the sides and roll tightly from the bottom up to form burritos.
  6. Toast burritos seam-side down in a skillet for 2 minutes per side to seal and crisp.
