Ingredients
1.5 pounds beef chuck roast, cut into chunks
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 large yellow onion, sliced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup red wine (optional)
2 cups beef stock
2 sprigs fresh thyme
1 sprig rosemary
1.5 pounds yellow potatoes, thinly sliced
2 tablespoons butter or olive oil (for brushing potatoes)
1.5 teaspoons salt (divided)
0.5 teaspoon black pepper
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Pat the beef dry, then toss with flour, salt, and pepper.
2. Sear the beef in hot oil in an oven-safe pan until browned on all sides. Remove and set aside.
3. In the same pan, sauté the onions until soft. Add garlic and tomato paste; cook until caramelized.
4. Deglaze the pan with red wine. Simmer briefly.
