Ingredients

  • 1 lb beef sirloin or ribeye, cut into bite-sized cubes
  • 12 oz rotini pasta
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley (optional), for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini until al dente, then drain and reserve 1/2 cup of the pasta water.
  2. Heat olive oil in a large skillet over medium-high. Sear beef in batches until browned on all sides, about 4–5 minutes. Season with salt and pepper. Remove and set aside.
  3. In the same skillet, lower heat to medium and melt butter. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and let it simmer gently. Then stir in the parmesan cheese until melted and smooth.
  5. Return beef to the pan, add cooked rotini, and toss everything to coat in the sauce. Add reserved pasta water a little at a time if the sauce is too thick.
  6. Taste and adjust seasoning. Garnish with fresh parsley and serve immediately.
