Ingredients
For the Salmon Bites:
- 1 lb fresh salmon fillet, skin removed and cut into 1–1.5 inch cubes
- 1 tbsp olive oil
- 1 tbsp cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha
- 1 tsp honey or maple syrup (optional)
- 1 tsp lime juice
- Pinch of salt
Garnishes (Optional):
- Chopped chives or green onions
- Toasted sesame seeds
Instructions
- Pat salmon cubes dry and place in a bowl.
- Toss with olive oil, then season with garlic powder, paprika, onion powder, salt, pepper, and cayenne.
- Add cornstarch and gently toss to coat.
- In a small bowl, whisk together all bang bang sauce ingredients until smooth. Refrigerate until needed.
- Heat a nonstick or cast iron skillet over medium-high heat. Add a bit of oil.
- Place salmon cubes in pan, spaced apart. Sear 2–3 minutes per side until golden and cooked through.
