Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, beating until smooth. Fold in the mashed bananas.
- Gradually stir the dry ingredients into the wet mixture. Mix until just combined.
- Fold in the chocolate chips or nuts, if using.
- Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a fork to gently press each dough ball.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
