Ingredients
4 large sweet onions
1 ½ cups freshly grated Asiago cheese
2 tablespoons unsalted butter
¼ cup low-sodium vegetable or chicken broth
1 tablespoon olive oil
Salt to taste
Freshly ground black pepper to taste
1 teaspoon fresh thyme or rosemary *(optional)*
1 garlic clove finely minced *(optional)*
Chopped fresh parsley for garnish *(optional)*
Pinch of crushed red pepper flakes *(optional)*
Instructions
1. Preheat your oven to 400°F (200°C). Grease a cast iron skillet or baking dish with olive oil and pour in the broth.
2. Peel the onions and slice into ¾ to 1-inch thick rounds, keeping the rings intact.
3. Place each onion slice flat into the pan.
