Ingredients

For the Donuts:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup granulated sugar
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup fresh or frozen blueberries
  • 1 tsp flour (for coating berries)

For the Blueberry Glaze:

  • 1/2 cup fresh blueberries
  • 1 cup powdered sugar
  • 12 tsp lemon juice or milk

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a donut pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk sugar, buttermilk, egg, melted butter, and vanilla until smooth.
  4. Gradually fold the dry ingredients into the wet mixture. Do not overmix.
  5. Toss blueberries with 1 tsp flour and fold gently into the batter.
  6. Spoon or pipe the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 10-12 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
  9. For the glaze, puree blueberries and strain if desired. Mix with powdered sugar and lemon juice/milk until smooth.
  10. Dip cooled donuts in glaze and allow to set before serving.
