Ingredients

1 lb elbow macaroni

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

3 cups whole milk

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika (optional)

3 cups sharp cheddar cheese, freshly shredded

1 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, grated

1/2 cup panko breadcrumbs (optional, tossed in 1 tablespoon melted butter)

Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Cook macaroni in salted boiling water until just al dente. Drain and set aside.

3. In a saucepan, melt butter over medium heat. Add flour and whisk constantly for 2 minutes.

4. Gradually add milk and cream, whisking until the sauce thickens (about 5-7 minutes).

5. Season with salt, pepper, garlic powder, onion powder, and paprika.

6. Reduce heat and stir in 2 cups cheddar, mozzarella, and parmesan until fully melted.

7. Combine the sauce and drained pasta in a large bowl or pot. Mix well.

8. Transfer mixture to the baking dish. Top with remaining cheese and optional breadcrumbs.

9. Bake uncovered for 25-30 minutes, or until golden and bubbly.

10. Let rest 5-10 minutes before serving to allow the cheese to set.

Notes

Always use freshly shredded cheese for better melting and smoother texture.

Resting the dish after baking ensures it sets and serves cleanly.

Try mixing different cheeses like gouda or fontina for extra flavor depth.
