Ingredients

  • 12 oz fusilli pasta
  • 1 bunch asparagus, trimmed and chopped
  • 1 cup green peas (fresh or frozen)
  • 45 radishes, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 8–10 minutes.
  2. During the last 2 minutes of cooking, add the asparagus and peas to the pot. Drain everything together and rinse under cold water.
  3. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper.
  4. In a large bowl, combine cooled pasta and veggies with sliced radishes and parsley.
  5. Pour dressing over the salad and toss gently to combine.
  6. Add crumbled feta and toss again just before serving.
  7. Chill for 20–30 minutes for best flavor, or serve immediately at room temperature.
