Ingredients

2 large Granny Smith apples, peeled, cored, and diced

1 tablespoon lemon juice

1/3 cup granulated sugar

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Pinch of salt

1 tablespoon unsalted butter

2 teaspoons cornstarch

1 tablespoon water

1012 egg roll wrappers

Water or egg wash, for sealing

Vegetable or canola oil, for frying

Powdered sugar or caramel sauce, for topping


Instructions

1. Peel, core, and dice the apples. Toss with lemon juice.

2. In a saucepan, cook apples with both sugars, cinnamon, nutmeg, salt, and butter over medium heat for 5–7 minutes until softened.

3. Stir in the cornstarch slurry (cornstarch + water) and cook until thickened, 2–3 minutes. Let cool.

4. Place filling on egg roll wrapper. Fold bottom corner over filling, tuck in sides, and roll tightly. Seal edge with water or egg wash.

5. Heat oil in deep fryer or heavy skillet to 350°F.

6. Fry egg rolls in batches for 3–4 minutes or until golden brown. Drain on paper towels.

7. Dust with powdered sugar or drizzle with caramel sauce. Serve warm with ice cream if desired.

Notes

Let the apple filling cool completely before assembling to prevent soggy wrappers.

Don’t overcrowd the fryer—cook in small batches for even crisping.
