Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 ½ cups unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. Cream butter and sugars: In a separate bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and applesauce: Mix in eggs one at a time, then stir in applesauce and vanilla extract until well combined.
  5. Combine wet and dry ingredients: Gradually add dry ingredients to wet ingredients, stirring gently until just combined. Fold in nuts or raisins if using.
  6. Bake: Pour batter into prepared pan and smooth the top. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Let the cake cool for 10 minutes in the pan before transferring to a wire rack. Serve plain, dusted with powdered sugar, or with caramel sauce.
