Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

8 slices bacon

1 cup shredded Colby Jack cheese

2 tablespoons chopped fresh parsley

1/2 cup Dijon mustard

1/2 cup honey

1/4 cup mayonnaise

1 tablespoon lemon juice

1/2 teaspoon paprika


Instructions

1. In a small bowl, whisk together Dijon mustard, honey, mayonnaise, lemon juice, and paprika. Reserve some for dipping later.

2. Pat chicken breasts dry, then season with garlic powder, salt, and pepper.

3. Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden.

4. Cook bacon separately until crisp but still tender. Chop into bite-sized pieces.

5. Preheat oven to 375°F (190°C). Spoon honey mustard sauce over seared chicken in the skillet.

6. Top each breast with shredded cheese and chopped bacon.

7. Transfer skillet to the oven and bake for 10–15 minutes, until chicken is fully cooked (165°F internal temp).

8. Remove from oven, rest for 5 minutes, garnish with chopped parsley, and serve hot.

Notes

Marinate the chicken in honey mustard sauce for up to 2 hours for deeper flavor.

Use low-sodium bacon and cheese to cut back on saltiness.
