Ingredients

1 pound sirloin steak, cut into 1-inch cubes

3 medium Yukon gold potatoes, peeled and diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

4 tablespoons unsalted butter, melted

4 cloves garlic, finely minced

1 tablespoon fresh parsley, finely chopped

½ teaspoon crushed red pepper flakes (optional)

Extra chopped parsley (for garnish)

Grated parmesan (optional)


Instructions

1. Peel and dice the potatoes into even-sized chunks. Parboil for 5 minutes if desired, then drain and dry well.

2. Toss potatoes in 1 tbsp olive oil, garlic powder, smoked paprika, salt, and pepper.

3. Preheat air fryer to 400°F (200°C) for 3–5 minutes. Add potatoes in a single layer and cook for 10–12 minutes, shaking halfway.

4. Pat steak dry and season with salt, pepper, and 1 tbsp olive oil. Let rest at room temp.

5. Melt butter and stir in garlic, parsley, and red pepper flakes (if using). Set aside.

6. Add steak to the air fryer basket with the potatoes. Cook together at 400°F for 6–8 minutes, flipping steak bites halfway.

7. Remove and place everything into a bowl. Pour garlic butter over and toss gently to coat.

8. Garnish with extra parsley and parmesan if desired. Serve hot.

Notes

Parboiling the potatoes gives you that extra crispy texture while keeping the insides tender.

Letting the steak sit at room temperature ensures it cooks evenly and stays juicy.

Don’t overcrowd the air fryer; cook in batches if necessary for the best crispiness.
