Ingredients

  • 2 cups shredded cooked chicken (e.g., rotisserie)
  • 1/3 cup buffalo sauce (like Frank’s RedHot)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • 10 egg roll wrappers
  • Olive oil spray
  • Optional: Ranch or blue cheese dressing, for dipping

Instructions

  1. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and green onions. Mix until fully blended.
  2. Lay an egg roll wrapper on a clean surface, positioned like a diamond.
  3. Spoon 2–3 tablespoons of filling into the center.
  4. Fold the bottom corner over the filling, then fold in the sides and roll up tightly. Seal the top edge with a little water.
  5. Repeat until all wrappers are filled.
  6. Preheat your air fryer to 380°F (193°C) for 3 minutes.
  7. Place egg rolls in a single layer in the air fryer basket. Spray lightly with olive oil.
  8. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
  9. Let cool slightly before serving with dipping sauce.
