Ingredients
- 2 medium russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 2 tablespoons butter
- 2 tablespoons sour cream
- 1/4 cup shredded cheddar cheese
- 2 tablespoons cooked bacon bits
- 1 tablespoon chopped green onions
Instructions
- Wash and scrub the potatoes thoroughly; dry completely.
- Rub each potato with olive oil and sprinkle all over with kosher salt.
- Preheat the air fryer to 400°F (200°C) for 3 minutes.
- Place potatoes in the air fryer basket with space between them.
- Cook for 35–40 minutes, flipping halfway through.
- Test doneness with a fork; if needed, cook an extra 5 minutes.
- Slice open, fluff the inside, and top with butter, sour cream, cheese, bacon bits, and green onions.
